At this time of year of spirits, over-indulgence and snoring grandparents a few little extra treats give that special touch to the festive teas or dinners. One of my family's faves is the rum cream that I make to go with their favourite fruit or jelly.

To make this all you need is a sachet of DREAM TOPPING(one makes enough for 4) and up to 1/2 a pint of cold milk. Use slightly less than on the packet, and mix accordingly. When no-one is looking grab a bit of rum( a capful is plenty) and without drinking a drop tip into the topping. Whisk frantically mixing it in well and then add a tablespoon of icing sugar to the cream. Again whisk it well together until thick and dreamy, sorry, creamy!

Serve it with fruit, jellies or even mince pies. Once tasted never forgotten.

Also the cream can be used in the middle of a victoria sponge cake instead of buttercream or in small butterfly cakes.

It can be made just before use or frozen or refridgerated in a plastic container and will last (if you are lucky) up to 3 days.

If you do not like rum any Christmas spirit can be used. I personally have used sherry, rum, brandy, whisky, port, cointreau, pernot and cherry brandy - although not all at the same time!!

Enjoy this cheap alternative to fresh cream. It can be made healthily with skimmed milk, and still have the treat added.
