Advantages: Great for children to make

Disadvantages: Can make a mess

Looking for something special for the kids to make in the christmas holidays.Try these great coconut mice, they taste good and look great.
You will need 250g 10oz of icing sugar
200g 8oz tin of condensed milk
175g 7oz desiccated coconut
red and yellow food dyes, liquorice bootlaces
silver cake decorating balls and sweets for the ears.

1.Mix the icing sugar and the condensed milk and stir in coconut.

2.Add a few drops of yellow food dye to a dessrt spoon of the mix.

3.Put the rest of the mix in two bowls.
Add a few drops of red dye to each one.

4.Stir in the dye.
Add a few more drops of red to one of the bowls.

5.Dip a clean tablespoon into some water and let it drip.

6.Use the spoon to lift out a big spoonful of mix.Pat it smooth on top.

7.Turn the spoon over and put the mouse shape on a piece of foodwrap.

8. Pinch a nose at the thin end.Add sweets for the ears ie white chocolate buttons are good.Put the silver balls in for eyes.

9. Push some liquorice under for a tail.

10. Leave to harden.

You can also make some cheese from the yellow mix by rolling it into a ball, then flatten it.Cut the cheese into wedges as if you were cutting a cake into slices.
My little girl loves cooking and these mice are her favourite.A good thing to let your children do to join in with the christmas season.
