Advantages: everyone can enjoy a Christmas dinner

Disadvantages: Need to cram everythig in the oven!

I cooked Christmas dinner for eight people last year and one of them (my mum) is a veggie. If you are in a similar situation this year dont panic...its easy!!

First of all, you need something to replace the turkey. There is a vast choice on the market so you might do well to ask the person what they prefer. My mum has a nut roast which you just put in the oven to cook and there's nothing else to it.

Next is the stuffing. I personally dont bother stuffing the turkey but if you do, just cook a little piece seperate. It doesnt take any extra effort and will only take up a small amount of room in your already over filled oven. Dont forget to check though that the stuffing is suitable for veggies as some do contain pork etc.

Dont cook your potatoes and parsnips in lard. You can either use cooking oil or there is a solid fat version on the market that is actually suitable for veggies. Cooking oil does work just as good as lard so you will still have your crispy potatoes!!

Lastly dont forget the gravy as normal oxo or bisto isnt suitable. Have a look in your supermarket as there are plenty of alternatives available.

So there you are...no problems. A perfect dinner suitable for everyone with no extra effort!!

You make it sound easy. I don't like making 2 separate meals so always open to simple ideas. I use oxo granules for gravy now but the vegetable one and the non-veggies haven't complained
