Filo pastry has got to be one of the hardest things to create in cooking. It takes ages, is really fiddly and frankly is just not worth the effort when Jus Roll have created a ready made roll for you to use. It costs a few pounds and comes in a purple box.

To use just take the roll out of the box, unfold really gently uncurling the roll as you go. The pastry comes attached to baking paper so you need to remove this very carefully. If you do it right you should end up with the paper underneath and the pastry resting on top.

Put the pastry either whole onto a tray, line a tin with it, or cut up to use as indiviual parcels.

You can literally make anything with this pastry. I usually buy a few rolls at a time and keep it in the freezer until the day I want to use it. It takes a few hours to defrost and you should keep it in the fridge as its fresh.

It can be used for savoury or sweet dishes, when cooked the pastry doesnt really rise but goes a bit puffy and very crispy and crunchy. The pastry when not cooked is very thin and you have to be careful not to tear it unless you mean to.

The companys website has some lovely recipies that you can use free of charge if you are stuck for ideas. I find it tastes nice with fruit, sugar and cinnamon if sweet. For savoury any kind of cheese and meat with spinach and small cut vegetables.
