      Yummy Almond Extract!

      I was making some sponge cakes the other day and I saw we'd got some flaked almonds in the cupboard so I decided to make something like the almond slices you get that are made by Mr Kipling. I went to Sainsburys to get a few bits and pieces and while I was looking in the baking aisle I saw that Silver Spoon made an Almond Extract, they was on special offer and a bottle was only 59p so I decided to buy some to give my cakes a bit of something special.

      You only need a few drops in enough cake mix to make 12 fairy cakes and it smells gorgeous in the bottle, it would be easy to overdo it but don't because if you put too much of the almond flavouring in you'll end up with majorly sickly cakes. It's easy to just get a few drops out because the top of the bottle has got a little nozzle and that means the liquid doesn't just pour out.

      You can really taste the almonds in the cake once they're cooked, I was expecting the cakes to taste of marzipan but you don't actually get that taste even though it still reminds me a bit of marzipan. I know it's made with almonds and I think I was expecting a bit too much..... so if you want a big time marzipan flavour then I deffo recommend you put a thin layer of it on as well as this almond extract and then your cakes will be delish.

      Mine came out yummy, I used apricot jam to stick the flaked almonds to the tops of the cakes and they did taste a bit like the almond slices from Mr Kipling. Even though they didn't taste exactly the same the cakes was still delish and I'll deffo be making them again.
