Speciality Farm Foods are pleased to offer you the finest Banda Island Nutmeg, the home of nutmeg./ The nutmeg is the fruit of the nutmeg tree which grows to around 25 feet and once matured after 9 years will produce a harvest a year for another 75 years. It's a long term project which accounts for its cost and desirability as a spice. Mace is the outside skin rather like on a conker which is removed and dried. The nutmeg itself being the seed is inside another shell when dried in the sun and traditionally over low charcoal burners. This shell is cracked off. Nutmeg and mace are used extensively in medicine./ In the kitchen it has the unfortunate honour of having made pease pudding palatable but is today enjoyed when used on brasicas, on potato dishes being especially delicious on mash and in leek and potato soup. Nutmeg is also a key ingredient in mulled cider and egg nog. It should be grated finely and always grated fresh from the nut. Special graters are available.
