I don't have a lot of time, so I tend to use mixes when I have a lot of cooking to do. This is one of the best I've found - cheap, easy to use, and is almost fool proof. All you need is water, an egg and the mix, along with a cake tin or cake cases to cook it in. If you use a mixer and follow the instructions, you can have the mix done and in the oven in less than ten minutes. You don't even need an electric mixer: Although it is the easiest way to make it, the mix is simple enough that it can be used without one as the majority of the work has already been done. As some of you will know, I love baking and usually manage a few sessions a week. The exception is when I go to stay in my parent's holiday caravan. The local shop is small and doesn't stock a lot of the essentials such as baking powder and what ready made cakes etc that are there are very expensive. I take groceries with me when I can but there is a limit to what I can carry without a car. So I thought one solution to my problems might be to buy some sponge cake and other packet mixes to take with me as they are light to transport. I love to bake but my boyfriend who's staying with me doesn't fancy cakes or cookies at all. So I rarely bake nowadays since nobody eats them. I do try to experiment from time to time when I find interesting recipe on the internet but frankly I'm not great at it. Few months ago I tried to bake this specific cake on four attempts and none of it was successful. Needless to say I became frustrated and lost enthusiasm. So the other day when I was doing my grocery shopping, my wandering eyes caught sight of this cake mix while I was walking past the bakery aisle. Yesterday I had a wonderful day. I had invited one of my very good friends around for a nice lunch and catch up. I didnt know what to provide for desert, walking around Tesco yesterday did not fill me with any enthusiasm. However walking past the baking isle I came across this sponge mix for 25p a bag so decided to give it a try and make a really indulgent victoria sponge. I was not overly impressed with the packaging. It was very basic and typical of the standard tesco value range. I know it's always better to make things 'from scratch' rather than relying on the convenience of packets of ready made mixes, but it is getting increasingly hard as the price of the ingredients to make things 'from scratch' are getting higher. Butter, sugar and flour cost a hell of a lot more than they used to, whilst you can get a packet of this Tesco sponge mix for just 23p, it really is bonkers. It's not just the price that makes this a good product though, it's also extremely quick and simple to make.
