Cant beat that freshly baked bread smell

I actually bought my bread maker from a charity shop that was closing down. I used to have a bread maker years ago and although it wasn't used all the time, I suddenly missed having one. Due to this one being the amazing price of £5, and being intact with instruction manual, recipe book, measuring cup and both paddles, I thought why not!!
I got the bread maker home and set about reading the manual, after lifting the lid, there was a rectangle metal baking tin that fitted into the base. There is a filament running round the outside of the tin which is what heats up to bake the bread. Inside the tin are two little poles, the petal paddles fit onto those and after making sure everything fit nicely, I immediately went shopping for bread making kits and wasn't disappointed. I bought a normal white bread mix, granary bred mix, banana bread mix, ginger cake mix and a sundried tomato mix. The packet mixes are a godsend because you tip them into the main tin, add the desired amount of water, close the lid and that is pretty much done. You can change what colour you would like the bread to come out by using the panel and display on top, and once all your options have been answered. The bleeping goes off and it starts to mix and make your bread. I have had no problems with making bread from any of the packet mixes. I will say that the Sundried tomato bread is defiantly my favourite, it tastes so good.
I have tried to make bread using ingredients that I have measured myself and have failed each time. Using the measurements given in the recipe book enclosed, the mixture always overflows and then burns on the element. It smells vile and has put me off making bread from scratch unless it is a packet mix I have bought.
The only real problem I have with the bread maker is once the bread is cooked, I can never get it out of the tin. I remove the tin from the actual maker and try tapping it, banging it, hacking at it with a knife, but it never easily separates from the paddles, I also can't get the paddles to come off the poles at the bottom. The bread tends to be a little bit hacked to bits before we can eat it. If anyone can give me tips on how to stop this happening, it would be greatly appreciated, after all this is the only drawback I have. Apart from the bread not lasting long enough.
Summary: Well worth the money I paid, not sure I would pay over £100
