Nice cooked on the BBQ

Halloumi is a cheese that I first came across while on holiday in Cyprus when we were invted to have dinner with a local family who were related to the other couple we were on holiday with, well dinner was a bit of a feast cooked on the BBQ or a clay oven and this was where I first tasted Halloumi both cooked and uncooked.
It is made from either goats milk or sheeps milk and it is rather different to any other cheese I have tried. It is possible to buy in this country although watch out for certain brands in superarkets which are made from cows milk and do not tatse the same according to our Cypriot friends who buy theirs from a shop in North London and always get us some as well.
It is very white in colour and has a rubbery texture, sounds horrible but it is not at all. Personally I love it cooked on the BBQ where it then has a stringy quality inside and goes really well with meats especially ham or spicey sausage.
It does have quite a salty taste to it as well which certainly gives you a bit of a thirst however it is very mild and is almost neutral when eaten with other foods that have stronger flavours. For me I like the texture it adds to a meal. Un cooked it retans a bit more flavour with a slightly tangy fresh taste and goes well with a green salad when chopped up amongst the leaves.
