This hard Swiss cheese is made from cows milk. It comes in several varieties, each with its own individual taste. It is the oldest of the Swiss cheeses and though to have been made by the Romans. The taste is rich and mellow but it also has a very distinctive tang of its own. This cheese is aged for up to three years to allow the flavour to develop fully. There are younger versions of this cheese available though it is not easy to find in UK. This is called Spalen. Savor Sbrinz is aged for longer and is very hard and spicy.
