      This hard Swiss cheese is made from cows milk. It comes in several varieties, each with its own individual taste. It is the oldest of the Swiss cheeses and though to have been made by the Romans. The taste is rich and mellow but it also has a very distinctive tang of its own. This cheese is aged for up to three years to allow the flavour to develop fully. There are younger versions of this cheese available though it is not easy to find in UK. This is called Spalen. Savor Sbrinz is aged for longer and is very hard and spicy. It grates easily because it is quite dry and it is used in cooking. Infact, you can use it in much the same way as you do Parmesan cheese. Available in supermarkets and deli's everywhere in UK and it won't cost a fortune! Good sprinkled on bolognese as a change from Parmesan but add a bottle of red wine if you really want to savour the flavour.
