Wyke Farms Just Delicious Extra Mature Cheddar Cheese

The pre-packed version is easy to spot on any supermarket shelf as it is the stand out purple coloured packet.
Cheddar cheese is probably the most consumed cheese in the world, certainly the most sold cheese in the UK. Cheddar cheese originates from Somerset and dates back to at least the late 12th Century, taking its name from the now famous Cheddar Gorge or caves at Cheddar where the unique cheese was stored. The constant temperature and humidity of the caves provided a perfect environment for maturing the cheese. The name cheddar derives from the cheese making process that originated in the town of Cheddar known as "Cheddaring", a method of turning the slabs of curd and piling them on top of each other in a particular way to drain away the whey and stretch the curd. Thus, creating the hard unique texture cheese that we know today as cheddar. Whilst cheddar making in the Cheddar area of Somerset goes back over 800 years, Cheddar cheese is now made throughout the world with many favorites being produced in other parts of the UK. There is no Protected Designation of Origin (PDO) for Cheddar cheese, although earlier this century Somerset cheese makers fought hard to obtain the status. The compromise being that only cheese produced with local milk from the Westcountry region of England can be called "West Country Farmhouse Cheddar". Wyke Farms are based at Wyke Champflower in Somerset and the famous Glastonbury Tor can be seen from their main site. The town of Cheddar and its famous gorge is less than 15 miles away as the crow flies so Wyke Farms Chedder is the real deal.
Having learnt the dangers of junk food when my daughter was small as she had food allergies and wanting to always eat the best food I can at prices I can afford, I set out to discover more about the food we eat. I am interested in good wholesome food and passionate about things like food miles and sustainability. I first discovered Wyke Farms cheeses at a show. Wyke Farms are a family business in the beautiful Somerset countryside who have been making cheese since 1861. Since I discovered them a few years ago the company has gone from strength the strength and Wyke's is now the UK's best selling Cheddar range. The great thing about the range is that it is still made to the original family recipe today and Wyke Farms have consistently won prizes across the range. I like a cheese with a bit of bite. I have developed a taste for mature, yet creamy cheese and Just Delicious is absolutely perfect for my needs. I occasionally buy other products in the range, especially if they are on offer and Just Delicious is not. The wonderful team at Wyke Farms have also developed a low fat version, which is equally delicious, but low fat. I have tried lots of real Cheddar's and a lot of them are very nice such as Quickes or Godminster, but for a consistent genuine cheddar cheese I will always recommend and buy Wyke Farms Just Delicious it is tangy, full-flavoured, well-rounded and well, just delicious!
It's called Extra Mature because it is matured for 12 months to reach its peak. Just delicious has become one of Wyke Farms best-sellers, being highly versatile it has long satisfied the taste buds of those of us who took the time to seek it out and savour something special. Now readily available in supermarkets and despite its success and easy availability Just Delicious remains a special cheese, just as it was when I discovered it all those years ago.
The flavour is a pleasant cheddar cheese creamy and not too strong, Just Delicious lacks the bite and saltiness of some mature cheddar's and is all the better for it. It does not have the nutty sourness of many Traditional Farmhouse Cheddars. The texture is tight, yet with just enough crumble, it slices well for sandwiches, chunks well for salads and grates easily for cooking. I tend to thinly slice the cheese for toppings. Also, unlike many cheddars where the flavour is different throughout the cheese, Just Delicious is consistent through the block and from batch to batch. That's why it's my favourite cheese!
Tip: Remember if you are buying cheese for cooking that a mature cheese goes further as you need less in your recipe.
I remember reading recently on our local paper that Wyke Farms are setting up a Biogas electric unit and intend to not only become self sufficient and 100% green at their Somerset factory, but to supply enough electricity for the whole village quite soon and to be producing enough to actually be selling to the grid within a few years. A truly committed and remarkable initiative.
Price and Availability:
Realistically priced mid-range for cheddar, Just Delicious represents something special at an ordinary price. I am delighted to say that I may have been instrumental in getting it sold in both my local Morrisons and then nationally by Morrisons (I was so pleased when chatting to a Wyke Farms promoter at a show how proud they were to have just got the contract to supply Morrisons). I definitely was responsible for it being sold in my local Asda. So if you cannot easily obtain it, fill out a form in your local Asda, it's great to get the feedback that they are now stocking your recommendation! Available from Morrisons, Asda, Sainsburys, Coop and other good supermarkets.

6 month update: Still love it - even if their machines do make a mess of the roads!
I will be reviewing Wyke Farm's simply gorgeous cheddar. I bought this cheese on offer in Asda for £2 for my sandwiches. I don't have a particular brand loyalty, though I do tend to choose branded cheese over supermarket cheese, as cheese is their speciality so its guaranteed to be quality.
Compared to other brands I have tried, I particularly enjoyed this brand of cheddar. It was described on the packet as being "selected for its strong and rounded flavour". I chose this over the other options available in the offer which were mild and extra mature, as I like mature cheese to be flavoursome but not overpowering.
I was not disappointed with this cheese. A delightfully nutty flavour, with a slight crumbliness to the texture, makes this cheese a winner over competing cheddars for me. I enjoyed it so much I headed straight back to Asda the next week to pick up another pack before the offer ran out! I think at full price this retails at around £4 as do similar cheeses but if it were a toss up between the brands I would go with Wyke Farm.
Brilliant for sandwiches or for a nice flavoursome macaroni cheese, this is just the right degree of mature, not too strong but strong enough for cooking with this cheese to bring out the delicious flavours and to add a slight tang to a cheese sauce. My mouth is watering! I will have to go and make a macaroni cheese tonight now!

I have only recently started buying wyke farms cheddar, after I noticed one of their varieties on offer at the supermarket. Since then I have tried most of their products, and have not been disappointed, but Just Delicious cheddar is my favourite.
This cheese isn't too strong, yet has enough flavour to let you know you are actually eating something. In short, it provides the perfect balance between mature and mild.
It goes very well in sandwiches, as well as grated on to pasta or pizzas, and would, in my opinion, make an excellent choice of cheddar on a cheese board, as it is the type of cheese no one would find unpleasant.
The texture is very smooth and creamy, and does not crumble when slicing or grating, which is a huge advantage. It also comes with a resealable bag, something I have praised Cathedral City for, which keeps the cheddar fresh for much longer than alternative packaging, and stops it drying out.
Wyke Farms cheddar is available in most supermarkets, and comes in 250g and 400g bags.
Wyke Farms Just Delicious Cheddar is right up my street, I'm not a fan of when companies label their products with stupid names like "Just Delicious" or "Quite Tasty When You are Doing Yoga in Prison", I prefer just mature, mild, strong etc.
Fortunately all can be forgiven when it comes to this slab of delicious Cheddar cheese. Just Delicious is one of the most mature, strong and rich cheddars in Wyke Farms range. It seems that this Somerset based cheese has proved to be a popular export and it's widely available in a handful of supermarkets (including Marks & Sparks) in Poland's capital - much to my delight.
The cheese is so rich, it's got an extreme tangyness to it which could be off putting to those with sensitive taste buds but is a definite winner when it comes to my pallet. In fact, it's so morish that grating cheese becomes costly as you start dippign in to the bowl long before you've finished doing the grating and are then left with a lack of grated cheese and still a desire for more!
This is scrumptious cheddar at its best. The equally silly named "Simply Gorgeous" and "So Mellow" are for a totally different cheese lover all together as they go for a more subtle and less tangy taste. Their stronger brand "TNT" on the other hand is more for your hammerhead mouse who chases cats and sniffs around ash trays.
