      a good brand

      I bought one of these a few weeka go, to use to make some honey and mustard mash. It does work fine on its own though and has a real bite to it.

      The taste:

      I found this had a very sharp and acquired taste, it hits you straight away with a pungeont resonant flavour that makes the tongue recoil. You can literally taste the spice of the seeds. Combined with the zingy taste is a smoothy creamyness which offsets that sharp feel that you get, making for a very pleasant mustard.

      How to use:

      On its own just a tiny dollop is needed as it is quite strong. To use to make honey and mustard mash, I use a teaspoonful which gives it some much needed kick.

      Texture: Smooth with a grainyness, easy to spread and to remove from the glass jar.

      Availability: Good, I managed to find this in Tesco and it is well stocked.

      Verdict: For those wanting their mustard with some power behind it, but with an air of refinement, plump for this. It will cost you about £2 a jar.

      My favourite mustard!

      A regular feature in my fridge has always been some form of wholegrain mustard, and perhaps the most common version of this is the Maille Wholegrain Mustard. It is readily available in most supermarkets, and is a brand leader. It is multifunctional as a condiment, with uses ranging from an accompaniment on the side of your plate (no matter the meal!) to basting over a salmon steak with some honey for that extra flavour.

      The whole grain part of the Maille mustard is what makes this type of mustard stand out from the rest, with whole grains of mustard seeds contained within the mustard, making it more of a scrub paste than a 'sauce'-style condiment. I find that the texture is what makes it my favourite mustard, and I regularly have a generous dollop of it whenever I have a steak.

      One of my favourite recipes involves a salmon steak basted in a nice mixture of lemon, honey and wholegrain to make a paste/sauce. You can serve this with pretty much anything, although some form of potato and green veg is what I prefer. I find that the wholegrain mustard gives this dish a better consistency and you get the mustard seeds embedding themselves into the top of the salmon to make a kind of crust, which makes it stand out from other mustards.

      Maille is a very famous name when it comes to mustard, and it also has a wide selection of other mustards. However, this is the only mustard I get of the Maille variety, and this is largely due to the cost. Occasionally I will get the English mustard from Maille, but this is rare and is much stronger than Maille Wholegrain mustard, which, despite containing the mustard seeds, is a rather mild mustard, which makes it ideal for cooking as you don't get overpowered by the mustard smell or taste.

      The reason I don't often get other Maille mustards is due to the price. It costs in the region of £1.50 for a small jar of this mustard, whereas other brands and types of mustard are considerably less on the whole. However, you pay for what you get, and what Maille Wholegrain mustard gives you is a top quality mustard ideal for many uses with excellent taste. I highly recommend this mustard for everyone to use. Great taste, great texture and useful in many ways.

        Pretty good mustard. Very tasty.

        This Maille wholegrain mustard is quite a mild mustard. It is mainly a vinegar taste that is punctured by the strong bursts of mustard flavour that come from the seeds. In some ways it is part way between good old-fashioned colman's mustard (this is where the strong wholegrains seeds of mustard come in) and the French-style mustard you get for burgers (this is where the vinegar part comes in). It is not as sweet as a French-style burger mustard.

        It is an excellent compromise between strength on the one hand and sharp vinegar on the other. It works particularly well with dressings for salad. You can mix olive oil and vinegar together, roughly in equal parts but experiment according to your own individual taste. Then add a teaspoon of wholegrain mustard (again though, add more or less according to your preferred taste). Mix it all together and drizzle on salad - delicious!

        This mustard is quite expensive but it is a good make. However, I find there are less seeds in this Maille mustard than in some other French makes. I prefer more seeds and so only buy this if there are no better wholegrain mustards.

        OVERALL: Not bad, in fact quite nice, but no the best on the market.

          Maille wholegrain mustard is a firm favourite in my house. It's something we all eat as we are mustard fans. I mean to me someone who doesn't eat it in on a roast beef dinner is mad lol It's just not right at all! Pork pie begs to be covered in mustard as do sausages and ham sandwiches lol However this only got bought the first time because my step-dad cooks on a Saturday It's a bit of a ritual. Basically it's a fry up lol Always we have a huge flat mushroom, vine tomatoes, fried egg, liver and some kind of potato product whether it be curly fries, spicy wedges or hash browns and the only thing that is debatable is the meat which is served and whether I want an egg lol. Steak or pork is on offer and whether people want a slice of liver or not lol

          Now when my step-dad first arrived on the scene and started cooking it was all thrown together. Now a few years on he is a chef on a mission and gets up early on on a Saturday morning to watch blooming James Martin on some kind of cookery show. Inspired he now marinades our meat. Yep in mustard. Can see why he watches the show it's revolutionary!

          So after trying out a whole host of mustard's (reviews are coming lol) we all like this one best!

          The Packaging....

          A 210g see through roundish glass jar with a black screw on lid. The lid has Maille wrote on it and a crest on it and around the rim of it says Maille in gold writing a couple of times. On a black label on the front of the jar again I'm told it's Maille and in white writing it says Wholegrain Mustard and under that it says ' moutarde a l'anchienne' and the size (as I've stated already). On a light yellow label on the back I'm again told what it is, ingredients, nutritional values are given, allergy advice, the recycle sign is on there, told its a Unilever product best before date is on there as is the bar-code. Simple and nice design. very er French!

          The flavour....

          Strong. Very. It's a dark yellow in colour and you can see the brown grains in it. The mustard has a moist consistency rather a liquid one but not as thin as conventional yellow mustard. You have to use a utensil to get this out the jar as it doesn't pour or trickle out. Actually you can pour a little of the oily vinegar out that sits on the top of the mustard saying that! Firstly the smell is awful.

          Like most mustard's sniff it and it kind smells so hot that it burns your nostrils. Well this is the same with a really strong smell of vinegar. Luckily when using it on food you cant particularly smell it which isn't so bad but smell it out the jar yuk and it's really off putting and not one bit nice.

          Taste wise I like it. However I like vinegar! If you don't like it you may well struggle with this because quantity wise this is made is made up 47% spirit vinegar and 30% mustard seeds!. I feel if someone gave you some of this to try you wouldn't guess it to be mustard at all. Yes it hot that's where for me it kinda stops in its similarities. This is different. The vinegar gives a very sour taste and the sugar in this gives it a very sweet taste that comes on the palette after the initial hot taste then the sour and then yeah, sweet.

          The grains in it are very soft. You can 'pop' some of the seeds in this in your mouth but none are hard or gritty as the grains are very moist. It's basically quite a soggy mixture and spreads easily and my taste buds love it. Great for cooking with but this can't be compared with ordinary mustard's so if your a fan of those you may not like this but if you don't like usual mustard's then this is so different you may well like it type of thing lol

          Give it a try!
