I bought Vegetarian Supercook by Rose Elliot a couple of years ago, upon a recommendation by a veggie friend. Of the dozens of vegetarian cookbooks I own, this one has proved itself to be a firm favourite. The Vegetarian Express, is really a great book to buy for someone who isn't a great chef to begin with. If you are already a good cook then this book won't really give you anything that you don't already know how to make (although it does have some very colourful and unusual recipes). Without meaning to be sexist, I think this is actually a really good book to buy a guy. I bought this for my brother in law when he first turned veggie and was a student. He was struggling: living on a diet of humous, veggie sausages and chips. I know that this book was well used by him because each page is spattered and somewhat crumpled!
