I recently reviewed my Denby James Martin easy to clean casserole dish so it seemed appropriate to introduce you to another of my secrets in the kitchen- the Circulon Bakeware 9"x13" Rectangular Cake Tin. This is actually what I would call a brownie tin since it is the size I grew up using to bake proper, dense, chocolately American brownies, but it also works for sheet cakes (although I tend towards round layer cakes most of the time so don't often use it for that purpose).
This is not the easiest size tin to find in the UK which is not that surprising as it is based on Imperial measurements (inches) not Metric ones, but after searching a number of high street shops to no avail I ended up ordering this tin from Amazon for £12.80.
The Circulon Bakeware Rectangular Cake Tin measures 9"x13" and is made of carbon steel. It is reasonably heavy giving the impression of quality. This also seems helps things to cook evenly (at least I've not had a problem in any of the 3 ovens I've used it in). The most distinguishing feature is the pattern of circular ridges on the bottom of the dish. When I first saw these ridges I thought they would make the tin really hard to clean...but I was wrong. This is by far the easiest to clean cake/brownie tin I have ever owned. Apparently, the tin uses Circulon's patented TOTAL TI Titanium Composite Hi-Low Release System which is code for an extremely effective non stick system. No more soaking and scrubbing- this wipes clean with a sponge and warm soapy water.
This dish is tough as well as easy to clean. I have had it over a year and it still looks new despite frequent use and abuse. I'm not particularly careful about not scratching the dish (I regularly cut the brownies or whatever I've cooked with a sharp knife while it is in the tin).
Amazon is currently selling this dish for £13.85 which is slightly more than I paid but still good value. The nonstick surface has a lifetime guarantee so if it ever ceases to be nonstick you can send it back.
All in all, I have been very pleased with this dish and gladly give it 5 stars.
