Advantages: Versatile , looks good enough to serve straight to the table.
Disadvantages: The fluted edges can be a bit troublesome.
Pyrex make almost indestructible cookery ware, In over 20 years of cooking both at home and as a cook at sea I have only broken one pyrex lid which slipped out of my hands on to a stone floor the first night we moved into a house after 15 years of living on our boat!
All at Sea with Pyrex
I have a particular fondness for the fluted flan dish as at one time I was a cook/stewardess on a beautiful new Italian made power boat "somewhere in the Med" My husband had been skipper for the Boss on his previous smaller boat and now on the larger boat we were all set to entertain his friends, family and work associates. We were all ready, we thought, for the first trip and meal aboard , everything gleamed, even the gleam on the gleam gleamed. I had been primed by the cook at the Bossīs , house as to their tastes and was serving a simple meal of Gazpacho, grilled fish, steaks and salad. All went well until we anchored, it was a bit rocky and our new stewardess, on loan from the house, turned green and disappeared below! At 2-00pm I was ready to serve the meal and everyone was sitting around the table ready to begin. Then, the Boss went on his mobile phone for 40 mins!!!, well I did my best but there is only so long you can keep food looking and tasting good. No one, of course,would eat until he did and although the meal turned out all right, I was a complete wreck by the time the meal was finished!
We decided that that would never happen again, they could have a buffet and like it! That is how my pyrex dish came into almost constant use that summer as a steady stream of flans and quiches were made and gobbled by all that came on board.
Made out of borosilicate glass which is thermal shock resistant it can be used in temperatures from -40C to +300C, so that means it can be used in the freezer and the oven, very versatile.The base is 25cm in diameter and the lip just 2cm more at 27cm. The depth is just about 3cm. It's size makes it ideal for parties and I have found that one flan can serve at least 8 hungry people, more if you are serving a variety of food. The flutes can be a problem in that it is sometimes difficult to lift your flan out of the dish but because the dish is so attractive it is nice enough to place on any table as it is, just warm the flan up a little in the oven (the micro wave will make the pastry go soggy), and at least that way people know it is homemade! It is also a good idea to cook your flan on a metal tray to make your bottom nice and crisp if you know what I mean! It can be hand washed or put in the dishwasher and can also be used in the microwave. It is stain and scratch resistant and does not hold odours and really is tough as old boots. It is a real help when you have limited space like in a small kitchen or galley.This particular dish is also attractive enough to use as a serving dish for cheese- cakes and desserts or even fresh fruit nicely presented, I also used it a lot to served thin sliced tomato and onion salad, dresed with olive oil and scattered with basil. The mix of colours is stunning, just take the dish to the table and let the guests help themselves.
I wouldn't be without it, particularly for parties and entertaining, it really is a no worry type of dish that looks pretty good too. Multi talented it seems to live forever and is certainly good value at around 6.00p . The fluted edge can be a little troublesome to wash but a soak in hot water does the trick. Invest in one and it will give you years of happy flans and you wont have to worry about the length of phone calls any more.
