With the Christmas Fare approaching at my sonís school I have to take in the required home made cakes for the popular cake stall. Being honest, I am not very good at making cakes and usually buy shop brought ones, add a little decoration of my own and pass them off as home made. However this Christmas I was feeling all confident about producing a master piece for my son to show off with on the morning of the contributions.
My first attempt at the cake turned into a pile of crumbs; barely distinguishable from the bottom of the biscuit barrel and so my trustee bread maker came out the cupboard and the perfect Madeira cake appeared. It was very boring looking and plain though and needed spicing up with some icing and decorations. Memories of my mumís butter icing came to mind and I knew I wanted to make something along those lines, however no matter how much I tried to get the perfect balance of butter and icing sugar, it just didnít resemble in taste what I had in my mind. So down to Sainsburyís I went and came across the Supercook range.
The icing I chose came in a plastic tub, with a sealed lid, which requires breaking the tab to get it open. Great as you know it hasnít been tampered with or opened in the shop by some kids grubby little mitts!
Anyway, inside, the icing is sealed in place with a plastic topping, directly moulded over the level of the icing. It keeps it moist and fresh and stops it drying out and hardening up. I chose the Vanilla Icing but Supercook do a range of different flavours in this set, from chocolate to fudge and I am keen to try the others soon.
The icing was exceptionally soft and after removing the plastic topping I was able to spoon out a dollop very easily. I had already sliced off the top of my cake so it was a flat surface to work on and with a simple flick of the wrist the dollop of icing fell off the spoon on to the top of the cake. Repeating the procedure, I covered the top with about six large spoonfuls of icing and then forked it over the cake to cover the entire top. I left it all forked up to resemble snow peaks and then added my own Christmas decorations to the top. The consistency of the icing is perfect for this type of decorating, as it is stiff enough to allow you to form peaks and different shapes, yet soft enough to smooth over with a spatula if you want a flat topping.
Obviously you want to know what it tastes like! Well, I have to tell you, it is quite divine! The vanilla flavouring comes through very discreetly, making it ideal for youngsters, as vanilla can be over powering if too much is used. It is sweet, as all icing should be, but it wonít make your teeth go on edge, like mine can after eating chocolate, for example. It is smooth and creamy on your taste buds and wonít make you feel ill if you eat a large slice of cake covered with this. I much prefer this soft type of icing to the hard, sweetness of royal icing and even though it is messier I prefer to give it to the kids.
The thing I like about this style of icing is that it can be used for the inside of cakes too. I didnít fill the inside of my cake but have done so in the past and it is delicious if coupled with a thin layer of jam. Also, another ideal use is when making Butterfly Cakes. You know the ones with little butterfly wings on the top and all the butter cream in between to keep the wings in place. You can use it in a piping set, although I am not confident enough to have tried this yet! But the consistency is definitely there for creating some lovely designs.
Overall, I am extremely impressed with this and having a long shelf life of around six months (if itís not opened) I will make sure I keep one in the cupboard for cake decorating. Speaking of which, if you donít use it all it will keep in the fridge for 21 days afterwards which I think is fantastic, as that gives you enough time to get over one baking session and still be able to use it up on a fresh set of cookies or something three weeks later.
For a delicious, not too sweet, non-dairy butter cream style icing, I would plump for Supercook Easy Ice every time. At the price of £1.79 for a tub you can really afford not to embarrass yourself at the Christmas Fare cake stall.
