We stayed in Fiji last year for a week and totally fell in love with the place. We actually stayed in the newer man-made resort of Denarau Island which is on the west side of Viti Levu, only 20 minutes from Nadi International Airport. Denarau Island is an area of former mangroves which was cleared and the land reclaimed from the sea over the past 2 decades. It is actually now the largest integrated resort in the South Pacific and boasts a variety of hotels (all the usual names you have heard of) and lots of activities from Tennis and Golf courses to boating and watersports.
