Filling and tasty storecupboard standby
Member Name: Kitchenbunny
Advantages: Quick, cheap and tasty
Disadvantages: Can bit a bit rich
Everyone should have a storecupboard stand-by, just to make sure there is something good to eat when the need arises. There is nothing worse than thinking "I've got nothing in the house to eat" and then going to the supermarket hungry and buying lots of things you don't really need.
My Emergency Dinner is quite a simple one. I normally have an egg or two, a few rashers of bacon, a bit of cheese and some pasta in the cupboard. My herbs and spice racks are usually full so they lend their tastes too. I would make a quick cheat's pasta carbonara.
100g pasta shapes
2-3 rashers of bacon or cooked ham
1 egg, beaten
a small bit of cheese, grated
First, boil the pasta according to the instructions on the back of the packet. Drain in a colander and set aside briefly.
Next, chop or snip the bacon or ham into small pieces and put them into the saucepan you boiled the pasta in. When it has cooked (if necessary, add a tiny bit of oil to prevent sticking), return the pasta to the pan. Sprinkle on a few dried mixed herbs and some garlic powder if you like, and stir the bacon and herbs so it coats the pasta.
Add the beaten egg and stir again to get everything coated. Next, add the grated cheese and stir over a low heat until everything has mixed together, the cheese has melted and the egg has cooked. Voila, pasta carbonara in a flash.
If you have some, you can add a little cream just before serving to make the sauce a bit richer.
Summary: A very quick one-pot meal
