Advantages: Tastes of holidays, really cheap to make in bulk

Disadvantages: oil goes down your chin if your not careful!

I've just got back from Malta (sorry) and I'm desperately trying to pick myself up from the miserable weather I returned to (how could you!) by recreating some amazing dishes I tried during my stay.

By far the most surprising meal was a gorgeous tuna based roll thrown together in under a minute and costing a little over 45p!

I wolfed the first then ordered another so I could take time to work out what the hell was in it that made it so truly yummy. On further orders on subsequent days I deduced that they actually made it differently each time - so this is just a rough guide.

You will need:

tuna
olive oil
tomato paste
capers
seasoning

pick and mix from any or all of the following:

large beans
carrot
crisp salad
beetroot
lemon juice/vinegar
whatever takes your fancy

Start off with some good bread - ciabatta if possible.

Cut in half and spread with tomato paste and a little olive oil - NOT BUTTER.

Mix the tuna with more olive oil (to taste) and a little lemon.

Season with course ground pepper and herbs (couldn't work out which but probably oregano or mixed)

Chuck in some butter beans or similar if you have them.

Pile the mixture into the ciabatta and sprinkle with capers. These bring out the flavour like salt would but with a much more seafood inspired tang. Don't leave them out unless you absolutely can't abide them! They make it sing.



Add some crisp lettuce/cucumber on top.

Close it up and chomp the lot.

Another quicker than quick and amazingly tasty recipe for the MUST-EAT-NOW brigade:

Cook some pasta.

Stir in some Garlic 'Roule' cheese.

Season (salt/pepper/whatever)

Eat.

After just reading a good op on 'eggless scrambled eggs (blueerghh!) this was just the right thing needed to turn the ole stomach back again!
