Arak (Arabic & Hebrew) or Raki (Turkish) is pretty much the same as Ouzo in Greece or Mastika in Bulgaria and Macedonia but instead it is the name given to it in Middle Eastern countries. Arak is anise-based and is rarely drunk straight - although I've come across it quite a bit in Israel. Whilst the so-called prototype arak should be made from grapes and anise, it's possible to make it from various fruit such as figs, plums and potatoes. It's said that the most integral ingredient to make really good arak is Damascene anise from Syria and that the plentiful vineyards of the Homs area in Syria also produce the best grapes in the region.
