It tends to have a longer growing season to other grapes, and as such there are many varying degrees of ripeness, at which the grape can be harvested. Places with a hot climate, like California, will tend to leave the grapes to over-ripen before harvest. So here we go again. Some might say that I have a seemingly impressive knowledge for wine, others may say that I just drink too much!! Either way, this time I want to take you through one of my favourites, Cabernet sauvignon. Probably one of the most well known types of wine there is, cabernet sauvignon is also arguably one of the oldest. The word sauvignon derives from the French "sauvage", meaning wild.
