THE MACALLAN even the name evokes a sense of hidden power. This is no ordinary malt whisky this is a King amongst them. It may not be to everybody’s taste but there can be no disputing the fact that this whisky is often awarded the top prizes when such things are judged. It is not a whisky that removes the top of your mouth with it’s taste, it is a mellow whisky that rewards the drinker with a pleasing aroma and taste that does not burn but leaves a feeling of contented well being in the mouth of the imbiber.

To describe this whisky is to say that the distillers have produced one of the finest examples of malt whisky currently available to the drinking public and produced it in a simple no nonsense style.
The bottle is clear glass with a cork that is covered by gold foil A simple neck label in cream & gold that merely states ‘The Macallan’ while the main label has a crest which gives the date that Macallan was established ‘1824’ The name again with a description of what ‘The Macallan’ is. For those of you that don’t know that it is a Single Highland Malt Scotch Whisky.
It states it is ten years old and is exclusively matured in selected Sherry Oak casks from Jerez.
It is this maturing that gives this whisky it’s distinctive taste and aroma.
Lastly you get the address of the distillery and the fact that it is a produce of Scotland.
40% vol and 700ml in quantity finish the front label.
The reverse label on the bottle I have has a picture of ‘Easter Elchies House ‘ the home of Macallan. along with a brief explanation of how the whisky is matured in sherry casks and for how long.

Now to the whisky itself it is distilled from fermented extract of malted barley. The Macallan uses a variety called Golden Promise it is a tradition barley that is lower yielding than modern counter parts but despite the cost it lives up to its name when fermented.
Four yea
sts are mixed to ferment this whisky rather than use just the one type, this will produce a perfect ferment and a more rounded spirit.
The stills used are the old fashioned copper stills and heated by a furnace from below. The resulting cut or spirit that is deemed suitable for casks is smaller than most. Fear not the remainder is sold on to blenders to produce mixed and blended whisky. It is just not good enough to bear the name ‘Macallan’.
It is always matured in Jerez Sherry Casks despite the cost. Although nobody has yet come up with a valid scientific reason for it Whisky has always matured best in oak casks that have previously contained sherry. It is also one of the reasons that Macallan has such a golden glow and a hint of sherry on the nose.

Other Whisky is matured in Sherry wood but Macallan is the only distiller that exclusively uses them
Macallan is a Speyside malt and has many of the characteristic’s of that area. It is a lighter malt not peaty like the Highland brands. It is a pleasing drink and very pleasing to drink. Even non whisky drinkers would find a Macallan and a finger of water a pleasing drink to end the day.

I don't know what it is but my stomach just will not let me drink Whisky, in any form whatsoever. I've tried single malts, blended stuff, cheap bottles expensive bottles. All it does is make a hasty retreat from my stomach with the remians of my lunch. You'll have to drink one for me in the future!

It's a pity really as I love the history and the process of whisky making. Theres a sort of romance to it. Very informative op.
