First, approach the bar. Look along the brassy taps, hoping against hope...oh..uh...yes! Its there!

Every time I go to a pub, I hope this beer is served. Increasingly, it is. Often served in Tetley heritage houses, and in small independant pubs, I drink this whenever I get the chance. First - the pint. It shouldn't be pulled too hard - get the bar lass to loosen the sparkler a bit (screw on thingy-bob on the bit where the beer comes out - makes beer artificially fizzy). Get your pint (never a half!) and wait for it to settle - not too long hopefully. The beer should be nice and clear, with a small frothy head - none of your creamy nonsense. A pale amber colour, gold in a glass.

Now, wait before you drink - you know you can! Smell the beer - all hops, flowers, this is one of the more fragrant beers you will smell. Now taste. Not some daft southern sip, a proper gulp. Feel the bitterness, and swallow. A nice, dry finish, with a touch of yeast about it. Now enjoy the rest of the pint - don't drink it too quickly, at 4.3 % it isn't too weak. In fact, this is a grand session beer. Four pints and you'll be in heaven!

Who is this beer best for? Well - not your twelve pint lager louts! This is a beer for experienced bitter drinkers, though if you've never had bitter before, give this one a go, as it really is one of the best.

Why is it so good? Well, its brewed by Timmy Taylors - a family business in Keighley. Up there they have good water - essential for any beer. They use quality hops (they give beer the taste), quality barley (this is the grained that is fermented) and quality yeast (makes the barley ferment).

Forget your creamy nitrokeg, and try a proper pint!

Before we went to university, a few of us used to meet in the Tap & Spile, Morpeth, Northumberland. Landlord was my first taste of real ale and I loved it. 10 years later and I still do, although i've never seen it in Liverpool (sadly)....

Tim Taylors best bitter is pretty good too - not as widely available though unfortunately.
