It coats the other ingredients quickly and the minute you pour it into the wok, you can see that it is full of chunky bits of peanut. The sauce is a rich brown; thick and substantial, not watery like some stir fry sauces can be. When it hits the heat of the wok, it releases an aroma that makes your mouth water. It contains coconut milk and red chilli, and smells spicy and fantastic.

I eat stir fries quite regularly but found myself getting really bored with the usual hoi sin, sweet chilli, or thai stir fry sauces I always bought. I saw this on my weekly visit to the supermarket and decided to try it for a bit of a change. The sauce comes in a small plastic packet, which contains 120g of the product. The packet is black, with the Amoy logo and a picture of a meal that's been cooked using the sauce.
