Advantages: Delicious beetroot without all the hassle of preparing your own.
Disadvantages: Vivid burgundy juice can stain
Beetroot is one of the vegetables that is very easy to grow but takes time to cook and because of its vivid colour can stain fingers, work tops and clothes. I therefore tend to by it from the supermarket in jars.
Baxters have been making quality beetroot since 1920s. The beetroot is hand picked to ensure freshness and quality and I can say I have never been disappointed with the quality of this product. The benefits of beetroot have been advertised recently and I believe it contains betaine, a substance that is supposed to relax the mind and is used sometimes to treat depression.
Ingredients:
Beetroot
Malt vinegar from barley
Acetic acid
Salt
Sugar
Sweetener - saccharin
The product is available in glass jars with a screw on/off lid in gold. It comes in two sizes 340g for 81p and 567g for £1.45 and is available in most supermarkets.
The gold lid features the batch number and the best before date printed on it. The label clearly shows the name Baxters and pictures of sliced deep ridged, crinkled beetroot.

On opening the jar you can see that it is packed to the rim with quite thick sliced beetroot giving a dark burgundy colour to the surrounding vinegar. The pieces can easily be taken out using a fork but care should be taken with the drips from the vinegar. The smell of the beetroot is overtaken by that of the vinegar but very appealing nevertheless. The actual beetroot is quite crunchy and I use it to garnish a salad or on cheese sandwiches. I have also used it to accompany a cottage pie. Although it is in sweet vinegar the beetroot and juice isn't that sweet.
Once opened it is advisable to store the jar in the refrigerator and to use within 4 weeks.
I have tried other varieties but I don't think any other can be beaten for the rich full flavour and quality of Baxters.
Summary: A great product that accompanies many dishes.
