If you read some of my latest reviews you a)know that I'll go travelling again soon and b) that therefor I'm doing my best to eat healthy to get fit and in shape. My latest idea was to have a vegetable soup for lunch at work - let's give it a try! I've always been a big fan of soup but with the exception of pepper/tomato soup I've never managed to cook anything that was worth keeping. Tinned soups are a easy solution, too easy if you ask me. Most don't taste anything like they promise on the label, are full of artificial flavours/colours or preserving agents and inferior products. I'm a big lover of soup, sometimes I think I could live of it as I have that much of it throughout the week, however although the soup isn't too bad for you, its the crusty bread with all the carbohydrates in it that hasn't gone down too well in my diet this week. AS a rule, I normally purchase Heinz soups and stick to the flavours that I know best, the likes of Oxtail, Vegetable and Chicken and I don't really venture any further than that when buying soups unless I am on holiday and they normally have all weird and wonderful varieties that I do enjoy. Carrot and Coriander soup has become quite a fashionable soup of late and in my search to find a nice one I came across this Baxters version. Carrots are good for you as they are rich in dietary fibre, antioxidants and minerals. Carrots also contain vitamin A. A lack of vitamin A can cause poor vision so by eating carrots you can restore good eyesight. However beware: Massive overconsumption of carrots can cause hypercarotenemia, a condition in which the skin turns orange although I think you have to eat a huge amount for this to occur. I must confess to being very fond of a good soup. Home made is always my first choice, but in today's busy lifestyle it is not easy to find the time to create such culinary delights. So when it comes to buying a ready made one my shortlist is very short indeed. Baxters Vegetarian Carrot and Coriander is certainly on that list. The soup is available from all the major supermarkets and smaller outlets, and seems to be a popular choice as despite keeping my eyes peeled, it never seems to be on offer for less than the current £0.86 retail price at Tesco. I am really into soup at the minute, especially now the nights are drawing in and the weather growing every chillier. As I am trying to make healthier food choices this seemed ideal. It is a vegetarian soup and Im definitely not a veggie but was drawn in by the fact that there are no artifivial colours, flavours or preservatives and at 160 calories and less than 3% fat for the whole tin it is great if you're watching your waist line too. I usually microwave mine at work as we don't have a hob at work for approx 5 minutes, stirring half way through and I must say it smells delicious.
