The Betty Crocker chocolate chunk muffin mix is one that caught my eye on the supermarket shelf as I have been known to enjoy the odd cake or two!

The mix comes in a cardboard box and one the front of the box is the Betty Crocker logo, a picture of muffins and tells you that you simply need to add one egg & water, also that this mix makes 6 muffins (large muffins though!).

The mix comes provided in a plastic bag and you simply pour this in a mixing bowl, add one egg & 130ml of water, stir the mixture until all mixed together, the batter will remain a little lumpy, then just spoon the mixture in to the 6 muffin cases provided and then cook for around 20 minutes in a 200 degree oven (gas mark 6).

The packet advises to use a muffin tin but I simply put my muffin cases on a normal baking tray and put this in the oven.

The muffins will rise and turn very fat during cooking and I was surprised as just how big they got. The smell that filled my kitchen was absolutely delicious and my mouth was watering in anticipation! To test that the muffins were done I just placed a knife in to the middle of one and when it came out clear I knew that the muffins were ready, I then removed from the oven and left for around 5 minutes before removing from the tray and putting on a plate.

I did sample a muffin as soon as they were cool enough and these were absolutely delicious, there were lots of milk chocolate chips & white chocolate chunks and these had melted just enough to release even more gorgeous flavour in to the muffins. The sponge is very light and fluffy and the whole thing works very well together and they taste absolutely delicious.

The only real downside to this mix is that there is no nutritional information on the packet so I cannot work out roughly how many calories there are in each muffin but perhaps that's just to save me feeling guilty after eating two, at least this way I can convince myself that they aren't that bad!

The muffins are very easy to make with minimal effort and I paid £2.19 for my kit which I thought was very reasonable as I already had eggs so didn't have to spend anymore money. The muffins tasted fantastic and I think that I could pass these off as homemade as long as I was ready to reel off the list of ingredients I supposedly used if anybody asked!

I am rating this mix 5/5 for ease of making, taste & how little washing up I was left with afterwards!

Summary: A fantastic muffin mix.
