I don't have a lot of time to cook and by the time I get home in the evening, I can just about manage to make everyone their dinner, but there is absolutely no way in the world that I want to start baking. Apart from the time issue, for some reason I am the messiest person in the world where flour is involved. I seem to be able to get it all around the kitchen without even realising it. Therefore any "baking" that I do always revolves around a pre-prepared cake mix where, if i'm lucky, it only involves the adding of water on my part.

Betty Crocker's fudge brownie mix is available from Sainsburys for £1.64 for 415g box. All you need to do is empty the contents of the cake mix bag into a bowl, add 1 egg, some oil (from memory I think it's 30ml) and water (70ml I think), and then stir it all together until it goes smooth. The box does say that you will not get all the lumps out but more often than not these are only very small anyway, and make no difference to the finished product.

Once this is mixed you can pour it into a well greased baking tray (I tend to use greaseproof paper in the bottom of my tray as I do tend to find that they stick otherwise), and pop it into a preheated oven (180c) for 25 minutes.

As mentioned in another of my reviews, my oven is a nightmare. I always have to lower the temperature by about 50 degrees and cut out about 10 minutes of cooking time. I would therefore say always take the instructions as a guide and I find that checking the cake by sticking a cake skewer in it is usually the way to go.

After it has finished cooking, leave to cool and then cut into brownie sized portions. The leave to cool bit never happens in my house as my husband loves to eat these warm, when they are still slightly gooey and sticky.

These aren't what I would call a classic fudge brownie. The texture of them is quite light in comparison to other brownies I have tried, and they do not have a particularly fudgy or chocolate taste. That however suits me fine. I don't really tend to like classic fudge brownies as I find them really sickly, whereas these are more like a moist chocolate slice and not too strong or sweet tasting.

My husband loves these warm with ice cream or extra thick double cream, or on their own once they have cooled down.

Summary: Ideal quick tea time treat
