Advantages: refreshing and can be made for everyday or that "special" occassion
Disadvantages: takes a bit of time but well worth it
If you want a something easy, simple and different for pudding or afters try a Birds Trifle.
I had not made this for years. My children grew out of the "jelly and icecream" stage but when I saw this last week thought it would be nice to do it again.
I learnt by the way it went so fast that you are never too old for a trifle!
The Trifle costs around 99p and serves 6 with good ample servings.
As you have the hot custard and the cold jelly it is best to make the trifle in the order they say on the instructions.
The contents of the box is custard powder, strawberry flavour jelly crystals, dream topping, sponge fingers and hundreds and thousands.
So start with the custard first.
To make the custard
Mix the custard powder smoothly with 1-2tablespoons of sugar and a little milk taken from 1 pint. Put the rest on to heat.
When the milk is nearly boiling pour onto the mixed custard, stiring well.
Return the custard to the suacepan and then stir until boiling.
Remove from the heat and leave until cool enough to pour over the set jelly.
Making the jelly
Dissolve jelly crystals in 425ml boiling water. Cool slightly before pouring over broken sponge pieces which you put at the bottom of the dish you will be serving from.
Put in the fridge until set. This will take between 30 and 40 minutes.
One word of warning here. If you are putting the triffle into a glass dish which does look nice, then dont put the jelly into it before it has cooled down slightly as the heat could crack the glass.
When the jelly is quite solid pour the custard onto the top of it.
Dream Topping
Just before serving the trifle measure f4 fl oz cold milk into a small bowl or cup and sprinkle on the contents of the sachet. Whisk steadily. You might find it easier with a hand electric beater until the mixture forms soft peaks. You can tip it upside down over your head to see if it is set but on your head be it. I will not take responsibility for that bit of it!
Then put over the custard and add the hundreds and thousands.
You can make the trifle without this dream topping if you wish or put it on each individual serving as I found with my family some liked it and some didnt.
You will find it nice too if you put the made trifle into the fridge and keep it there till just before serving.
Now the warmer weather is supposed to be on its way this makes a lovely sweet.

- 20/05/05 Not too keen on Bird's trifle - my mum makes such a good one I've been spoiled! But I do keep a dacket in the cupboard for those emergency moments when I need a naughty treat!
