Howver than man at the cheese show said he had 1000 curds maturing, they wont be ready for 2-3 years so hopefully I'll see some soon. The cheese is high in fat I am told but flavour is so nice you really don't care. Black diamond cheese was Established in 1933 by Robert F. Hart. You haven't lived until you've eaten this cheese. I tried this cheese at a cheese show. Sadly I've not seen anywhere I can buy it. Bacially black diamond cheddar is made from raw cows milk, then covered and cased in a black wax and aged a minimum of 2 years. It had a sharp, robust, tangy really cheesey flavour. It's so rich and strong you wouldn't want to go back to another brand. I do believe this is widely available in America, but not so in the UK.
