You haven't lived until you've eaten this cheese. I tried this cheese at a cheese show. Sadly I've not seen anywhere I can buy it.

Bacially black diamond cheddar is made from raw cows milk, then covered and cased in a black wax and aged a minimum of 2 years.

It had a sharp, robust, tangy really cheesey flavour. It's so rich and strong you wouldn't want to go back to another brand. I do believe this is widely available in America, but not so in the UK. Howver than man at the cheese show said he had 1000 curds maturing, they wont be ready for 2-3 years so hopefully I'll see some soon.

The cheese is high in fat I am told but flavour is so nice you really don't care.

Black diamond cheese was Established in 1933 by Robert F. Hart.

Historically and most recently, the cheese was dipped in hot wax to prevent mould growth on the rind and reduce shrinkage during the aging process.

When the wax touched the rind, the wax immediately turned "Black".

As a known 'Diamond' among cheeses for flavour and black on the outside the name "Black Diamond" was born.

"Black Diamond" became the first branded name for Canadian cheddar cheese.
