Newest Review: ... see some soon. The cheese is high in fat I am told but flavour is so nice you really don't care. Black diamond cheese was Established in 1933 by Robert F. Hart. Historically and most recently, the cheese was dipped in hot wax to prevent mould growth on the rind and reduce shrinkage during the aging process.
