I used to love brie but went right off it last year for some reason, this week though I've gone mad on it again and yesterday I got myself a big slice from the Tesco deli that cost about £2.00.

Brie is a rich cheese, I usually take mine out of the fridge for a bit before I eat it because that helps the flavour come through better and also lets the cheese go nice and soft because it does go firmer in the fridge.

It's got a strong taste but if you eat it with the white skin then it helps the cheese taste more mellow. I love it hot because it goes lovely and soft and the flavour of the cheese is a lot nicer when it's warm. Last night I cooked a slice of bacon and put 2 slices of brie and the bacon inside a croissant then warmed it all in the oven for about 4 minutes. Yummy!

When my mum has brie she spreads it with cranberry sauce and I'm starting to do it now as well because the fruity sauce goes wicked with the soft rich flavour of the cheese.

Brie goes proper nice with fruit though and if you've got grapes in the house you can try a brie and grape sandwich, it's best on a very light wholemeal bread but nearly as good on white. I haven't had it for ages but that's deffo going to be my lunch tomorrow! lol

The cheese I can think of that's most like brie is camembert, I love that one as well but brie deffo has the edge when it comes to the flavour and also how well it goes with other foods.

May irecommend Conte also, its a bit like strong chedar but a bit more bitter. Definately worth a try.
