Cathedral City Mature Cheddar.... I have to admit to being a bit of a cheeseaholic and will often refrain from buying nicer cheese so the fear of scoffing the whole slab down is taken away! I am mostly a lover of the real strong type of cheese so I will often opt for the Cathedral City Cheese so that others in the house can eat it and I am not overly fussed with eating it too much. The cheese itself is like most name brand cheese quite expensive but I will often buy it when it is on some sort of special offer and stock up as the use by date is invariably rather long and it can be kept nicely in the fridge. Way back in 1996, and I only remember the year because I was pregnant, I was working as an office manager for a little country hotel. So one night someone called down and asked for cheese on toast but did we have Cathedral City cheddar? It turned out we did, and the cheese on toast looked so nice I asked chef very nicely if I could have some too. I took it back to the office, and from first bite I was hooked. I am quite picky about my cheese in general, but Cathedral City's Mature Cheddar is one of the best I've had recently. The packet is rather noticeable, with its distinctive red packaging, although perhaps has a lot of competition on the cheese shelf, because so many cheeses do tend to have bright coloured designs. Nevertheless, it's designed ease of use at the core of its concern, for the packet can be resealed to ensure that your cheese lasts longer, and maintains a little of its inherent moisture and softness. I'm a bit of a cheese addict . I love pretty much all cheeses - rie, Camembert, Edam, all the funny ones with herbs in. But for a good old fashioned cheese sandwich, or a hot and bubbling cheese on toast, you can't beat a good old wedge of mature cheddar. Cathedral City Cheddar have been advertising on TV a lot, adverts with various people staring lustfully at cheese on toast, the advert always ending with the words 'You see it, You want it '.
