Advantages: good flavour

My Sunday night venture into the world of cheese continues, as I tackle Cathedral City. I used to work on a deli in Tesco on a Saturday, so I spent a year working with the darned stuff!
Cathedral City is a cheese that I like to return to every few months. It has grown in popularity over the last ten years, thanks to strong advertising campaigns.
Packaging:
It has a delightful wrapper, which you can cut into and then reseal. This makes it handy for quick access once you have opened it. I hate messing around with clingfilm and cheese, so top marks here.
The texture:
It is a relatively firm cheese. Press it and your finger will not sink into it, but be met with a robust yellowy block. The cheese is not so tough that it does not carve well though. It cuts very well, if one cuts one a thin slither. I would liken to it most standard cheddars that you find on shelves. There is no crumbling either, which means minimal mess.
Taste:
An excellent flavour, it has a certain ripeness which stimulates the tongue and leaves you itching for another slice. The thinner the slice, the better the flavour, I feel, as it allows for a level of delicacy to be reached. Too thick and it becomes overbearing. There is a pleasant aftertaste too, which leaves slight smoky undertones and conjures up images of Parisian walkways and walking by canals.
The cheese is available in all good supermarkets and can be picked up for around four pounds for a block. You can also purchase it as a twin pack. I would recommend using it with crackers or krispbreads. The cheese also serves as a topping for toast and is lovely grated over baked beans.
