Not the best mature cheddar out there (Cathedral City Mature Cheddar)

Advantages: Bright packaging, reasonable price, good for grating

Disadvantages: Not mature or tangy enough for me

Lately I went on a bit of a Cheddar hunt, although not impossible - it's never too easy to get hold of in Poland. Fortunately there's a shop near me that's been in great supply lately and the choice of different cheddars has been quite impressive.

I like a good Mature Cheddar and had no reason to doubt the Cathedral City brand, it came in a 200g slab that was rather slim and long, encased in one of those air tight packages that cheese has tended to come in over the last couple of years. Where as the majority of packages tend to be white though, this one really stood out with its light brown package and notably cheaper price tag.

When cutting into it, it seemed a tad more elastic than your average cheddar and certainly didn't crumble a great deal, despite having a cheddary taste it wasn't really mature like the extra mature one that Wyke farm do, in fact it lacked a strong tangyness altogether. Cathedral City Cheddar was quite good but I'd place it more between mild and mature than outright mature.

I did end up grating a bit of this to put in a fondue and have to say that it's a really ideal cheddar for grating because of it's non crumbly texture.

Summary: Quite good but the competition is strong
