Cheese lovers, prepare to be amazed! I know what you are thinking, because I know exactly what your experiences with low fat cheeses have been like, but you have to believe me, this one is SO, SO different. Prior to tasting this low fat cheese my experiences had ranged from cheeses that were a bit rubbery and a bit tasteless to something I wouldn't even feed to the dog. The only way I had ever been able to tolerate low fat cheese before was if it was melted, and that was nothing to write home about. My Other Half eats so much cheese it's unbelieveable. He won't eat the cheap stuff - but if i buy cathedral city cheese, its gone in a day. Lets just say he's put on a bit of weight recently, and i do think it's simply because he eats so much cheese. So I saw this in my local supermarket, and thought to myself "lighter" ... that means less satuated fat, less calories etc? I must admit I absolutely love cheese; foods such as macaroni and cheese are among my all time favorites. The only downside to my love affair with cheese is that it contains a high amount of fat. I try to keep both my and my husband's diet relatively healthy so I have purchased several brands of light cheddar cheese. Unfortunately, every time I tried brands such as Belight I was sorely disappointed with the overall product and especially the taste. The taste of the light cheddar would be as bland as chewing on a piece of cardboard. I've tried a number of 'low' fat cheese over the last year partly because my Dad's diabetic and every week they've been trying different reduced fat cheese's in the hope that one day they will find one that isn't 'rubbery' and 'grills' well. Although I was somewhat sceptical when I first tried this cheese this scepticism quickly turned to amazement ...it tastes just like their normal mature cheese. However, as expected it is alot more expensive than the standard mature cheese. I am Vegetarian. I'm also lazy and a bit greedy, so cheese has always been my favourite source of protein. Lets face it, lentils, chick peas and tofu haven't got the mmmmmmmme factor in quite the same way. Cheese is easier to cook with, and more widely available when eating out (pretty much every Veggie option in a pub features cheese, for example). So many lovely varieties, tastes and textures! Cheese is also very high in fat, of course. I'm on a diet (sigh), and for a couple of weeks I cut cheese out completely - to be honest I managed fine and appreciated my tofu and so on all the more for it.
