Undoubtedly one of the simplest ways to enjoy cheese is on a cheeseboard. Whether rounding off a family meal or adding the perfect finishing touch when entertaining, but there are so many other ways to enjoy this versatile product.

So with that is mind and the approach of Halloween,( no doubt you are wondering what to do with all the flesh that you have scraped out of your pumpkins! I knew you were!)

Well, here is the ideal solution.( It’s more of a soup than a solution!!!)

Cheese and Pumpkin soup.

The cheese that I use, yes I have actually made it, is White Cheshire. It is mild but tangy and has a slightly salty taste and is perfect to cook with, and whilst there are lots of other ingredients in this recipe it is the cheese that is by far the most prominent flavour.

You will need.

4oz white Cheshire cheese, crumbled.
2 peeled cloves of Garlic
10oz pumpkin chunks
1oz butter
1 pint water
1 onion diced
6oz sliced mushrooms
5fl oz single cream
3/4 pint milk
Black pepper.


Put water, pumpkin and garlic in a pan and bring to the boil, simmer until soft. Transfer to a liquidiser and puree, add cheese and blend again. return to the heat but don’t boil.

In a separate pan melt butter and fry onion and mushrooms then stir in pumpkin puree, add milk and re heat add cream and heat gently. Season well.

It is delicious if served with warm crusty bread.

The soup can be frozen if need be, but before the milk and cream is added.

No doubt other cheeses could be used but the tangy flavour that is only found in a good white Cheshire would be lost.

A great recipe and a way of using up the pumpkin that's scooped out when making hallowe'en lanterns.
