Edam ... is meant to be eaten within weeks of its creation, while it is still smooth. Edam intended for export is wrapped in red wax. Wine Partners: Pinot Noir. Fat Content: 25%. Water Content: 45%. Edam cheese has a very mild taste, slightly salty or nutty and almost no smell when compared to other cheeses. It also has a significantly lower fat content than many other traditional cheeses being approximately 28% with an average protein content of 25%. Modern Edam is quite soft compared to other cheeses, such as Cheddar, due to its low fat content.

I can't begin to comprehend why some unbelievably tasty cheeses struggle to get on the market whilst this cheese has all the fun! When asked what my favourite cheese is, I invariably answer Danish Blue because I love the richness of flavour when eating this cheese on hot buttered toast. This week however I have rediscovered a love of Edam cheese and I would now say this is a definite favourite, very possibly surpassing the more robust tasting cheeses that often grace my dinner table. What is Edam? Even if you do not know the name, you will definitely have seen wheels of Edam cheese. The standard UK cheese is cheddar, no doubt about it. If I go to the fridge and look for cheese I can expect to find at least one pack of cheddar, but by far the second most likely cheese I will find is Edam. My mother buys it as it is certainly healthier than cheddar, but in my opinion also lacks taste. In terms of consistency I would say it is of intermediate hardness. Certainly not as hard as cheddar, but not soft like Brie either. Its texture is like that of rubber, it bends and deforms but tends to spring back to its original shape. Edam is ubiquitous, it seems to bring a whole different meaning to cheese and I don't really think much of it. Often coated with a red wax, it's often tricky to differentiate between the plastic taste of the cheese and the wax. I think that Edam is very over-rated, sure it melts easily, it's user friendly and struggles to offend (unless you are allergic) because it doesn't really have much of a taste.
