Advantages: Good value for money, extremely versatile, tasty in so many ways

I love eggs for their versatility, their health benefits and their taste. I know they have gone up in price quite a lot lately, but they are still very good value for money in my opinion.
I only ever buy free-range eggs and I think that goes for most people now because all the supermarkets I visit these days have more free-range eggs available than any other kind. We've all seen the horrid conditions that egg-laying birds are kept in and I, for one, would not want to add to their misery by purchasing something that would ensure that the industry doesn't reform.
I buy my eggs mainly from my local farm shop so I can be sure they are fresh, tasty and come from happy hens. I pay around £2.55 for a dozen although they will probably be going up in price soon. The last supermarket eggs I purchased came from the Co-op and cost £2.65 for a dozen medium-sized eggs.
There are so many ways that you can use eggs. I used to like them raw mixed with fresh milk but, of course, with all the risks with raw eggs, I don't any more. I make lots of cakes so will get through a dozen in just one baking session. For this, I usually break them into a bowl and whisk them with a fork before adding them to the other ingredients.
I love omelettes (although, for some reason, my husband makes the best omelette in the family - it's the only thing he can cook with any confidence); we also have them poached, scrambled, boiled (with soldiers) and fried; in fact, fried eggs with chips make a lovely meal even without meat because they are full of protein. When you think about it, eggs can be eaten for breakfast, lunch and dinner although it would not be advisable to do this all on the same day!
All in all, I make sure I am never without eggs - they are one of nature's own 'convenience'and 'fast' foods and I would never take them for granted - they are far too useful.
Summary: Would not be without them
