We visited our friends in France this summer hols and one night I offered to cook for everyone I made a pasta dish for the grown ups and asked the children what their favourite meal was, they said pasta surprise now this they said was pasta baked beans and cheese.
So visiting the shop for ingredients I found emmental cheese I know this cheese (it’s a bit daunting sometimes finding the right cheese in France as there are so many unfamiliar ones for me).
Emmental is a Swiss cheese originally coming from the Emme valley the word tal that is stuck on to Emme to make its name means valley in Germany. This cheese is now made in other countries too. This cheese is made from cow’s milk. The original from Switzerland is made from unpasteurised /raw cow’s milk now mostly it is made with pasteurised milk

Emmental is a yellow medium hard cheese that has holes in it; the holes are made by one of the bacteria used to make this cheese producing carbon dioxide which makes bubbles. The longer the cheese matures the bigger the holes it usually matures over 3 or 4 months in the cheese cellar.

I use this cheese when making a pasta dish ,or a gratin dish as the cheese melts easily and bubbles up becoming golden brown on the top of a dish. I have also used this cheese when making a fondue.
Emmental is a mild flavoured cheese has a slightly nutty flavour
In Tesco England 250g of president Emmental costs1.99p sorry can’t remember what I paid in France.
The pre wrapped President make of Emmental cheese comes in the 250 uncut chunk but you can buy it grated or in slices.

Recipe for the children’s pasta surprise
Dry pasta, quantity variable , tin of baked beans, Emmental cheese, again quantity variable.
Cook the pasta , throw in the beans, cut up some slices of cheese heat till beans warm and cheese melts if cooked in oven cheese turns a lovely brown.
Serve to children. result lots of happy faces.
