One of my daughters is a vegan and it was with great delight that I discovered a coconut ice for sale which was suitable for her diet, and not only that, it is delicious! Traditionally made coconut ice is a mixture of condensed milk, coconut, and icing sugar, and the pink colouring used is often from cochineal, which is made from dye extracted from the eggs of the cochineal beetle. This vegan version has managed to substitute both the condensed milk, and the colouring ingredients, to make a vegan friendly version.
