Fiorucci Parma Ham ... less than 150 kg. Famous all over the world, it is recognisable for its uniform reddish-pink colour and its unmistakable taste. After butchering, a period of repose and the trimming, the hams are subjected to salting, followed by a period of curing for a minimum of 12 months in cool airy cellars located exclusively within the province of Parma. At the end of this period, the hams are tested by the master curers and, only after they have passed the "spillatura" examination, which consists of sticking a horsebone needle into 5 different points of the ham, are the hams ready to be branded with the famous trademark bearing the ducal crown with five points.

One thing I miss about living in a village in the Yorkshire Dales is that there isn't an Italian Delicatessen nearby. I can't pop in for my olives, Parmesan cheese or Parma Ham. The local supermarket supplies reasonable olives and good Parmesan, but their Parma Hams have a slow turnover and I've frequently found them to be more fatty and salty than hammy. I've resorted to buying something in a packet. First of all, what is Parma Ham, or as it says on the packet "Prosciutto di Parma"?
