There is nothing new about eating flowers! I first became interested in the whole subject in my twenties when I obtained a book from the library about just that. I set to actually grow edible flowers such as Marigolds and Pansies and it was really lovely adding them to salads, they created such a pretty display that they were enjoyed by all the family. I even saw them in Sainsbury's around that time in a bag of salad, but sadly not recently. I use rose water and orange flower water in fruit salads and add the former to cakes and my cleansing products are mainly natural and include these varieties.
