Fontina

Fontina is another Italian cheese I am familiar with. It comes from a small region in the North West of the country, Valle d'Aosta (Aosta Valley) which borders France. Mont Blanc is located there. I know for sure that Fontina is also produced in Denmark, although, like with all the other Italian cheese produced out of the country, it has got nothing to do with the Italian equivalent. This is because only the Italian version retain a pungent flavour, while the others are much more bland. The photo on Dooyoo is a good photo to represent Fontina. Fontina cheese . I had some Fontina while on holiday this year .I was holidaying in the Aosta valley of the Italian Alps. This cheese is a regional speciality being made in this area since the 12th century and possibly before. There are several similar cheeses but the real Fontina has a picture of the Matterhorn Mountain stamped on the rind which is a golden brown.
