Gouda ... and heated until the curds separate from the whey. About ten percent of the mixture is curds which are pressed into circular moulds for a couple of hours. The moulds give the cheese its traditional shape. Next, the cheese is soaked in a brine solution which gives the cheese its rind and improves the taste. After the salt soaks in, the cheese is then dried for a couple of days before being coated to prevent it from drying out. It is aged for a number of weeks before it is ready to be eaten. The term "Gouda" is now a generic name, and not restricted to cheese of Dutch origin. The term "Noord-Hollandse Gouda" is registered in the EU as a Protected Designation of Origin. The peculiar thing about this is that the city Gouda is located in the Dutch province Zuid-Holland. However, Gouda-type cheeses from Noord-Holland have a better reputation for their quality. Exported Gouda is usually the young variety (aged between 1 and 6 months, rich yellow in colour and with a red or yellow paraffin wax coating). This cheese is easily sliced on bread with a cheese slicer. Exported Gouda has a pungent underlying bitterness, yet is still considerably creamier than other common cheeses, such as cheddar cheese or Edam cheese. Locally, old Gouda (aged between 12 and 18 months, orange-yellow in colour and sometimes discernible by a black paraffin wax coating) can be obtained. This strong tasting cheese is hard and often too brittle to cut using a slicer, but it can be sliced by knife or served cut in cubes with drinks. Smoked Gouda is also a common find in many cheese markets and mega-marts.

Gouda cheese has risen in prominence since it was first produced around the sixth century. There are very types of Gouda cheese available. Normal, mature, with spices, with garlic and with nettle. My taste in cheese depends very much on the mood I am in, but one cheese I always enjoy is Gouda. For a start it is a round cheese and I only tend to think of real cheeses when they are round, as the great slabs of square cheese seen at supermarket delicatessen counters seem too mass produced for a luxury food. The cheese has a smooth, mild taste that gives it the feeling of a freshly made cheese just waiting to be eaten. It has a pale yellow colour and a soft, rubbery feel as the cheese can be bent and twisted. I quite fancied a change from Marmite on my Ryvita for a lunchtime snack so I checked out my local Sainsbury’s store for a cheese. Edam struck me as an attractive item (its red covering). Gouda is a Dutch cheese made from cows milk.It is a lovely pale yellow in colour. It is fairly soft (not as soft as cheeses like Brie though) and takes its name from the Dutch town of Gouda, which is near Rotterdam. This cheese is now made in other places throughout the world. It has a hard rind and is very mild to the taste. You can also buy Gouda that has been aged. This has a very pungeant taste and smell, (too much for me.) I don't personally like to use Gouda for cooking. It does have a strong enough flavour and tends to go stringey when you melt it. Apart from that it is usually too expensive in UK. Gouda cheese in produced in big flat shere shaped cheese and cut to different shapes. I actually went to Gouda once and saw the huge pieces of cheese. I think that Gouda cheese is very tasteful and soft. That's what I like about it. It's not a cheese that imposes its taste to you, but it lets you taste it. As it's a soft cheese, it can easely be cut and used in sandwitches and other eating things. It's of light yellow colour, and it smells really good. I have tried mature cheddar cheese and I think that Gouda cheese is a million times better.
