Kliks' Indian Chicken: Serves 4


This seems quite an extravagant recipe but I can assure you that it tastes sublime.

3lbs chicken thigh meat
1/2 tsp salt
1 tsp ground ginger,
1/2 cup of plain yoghurt
1/2 cup whipping cream
1/2 cup soured cream
4 tbsp butter
6 cloves
2 tbsp ground almonds
6 cardamom pods
1 inch of cinnamon stick
1/4 tsp crushed saffron
1 bay leaf

I put freshly gound black pepper in but I've been told to stop putting it in everything I cook, by the powers that be.(Mrs. Klik)

Mix yoghurt, ginger and salt together then rub into chicken.
Marinate overnight in fridge.

Bake in 190 C oven (gas mark 5) for 50 minutes, save any liquid.

In saucepan, melt butter and fry cinnamon, cloves, cardamom and bay leaf for 1 minute.
Add soured cream and chicken liquid and mix.
Add crushed saffron and whipping cream then mix.
Cover and simmer gently for 5 - 6 minutes.
Add chicken pieces and ground almonds.

Cover and let simmer for 4 - 5 minutes.

Serve with pilau or basmati rice.

yes you're right mpeh it is a recipe but it is also a review in the fact that over the years I've played about with different combinations of ingredients and this combination of them tastes really good. I suppose it saves other members doing all the experimentation. Saying that, it won't be to everybodies taste. But I don't mind others suggesting any tweaks that they have found to improve the taste of this dish. I'll amend the op. with any suggestions with the appropriate credits of course.

You'll love this one alkaliguru, it's a wonderful indian based meal that won't burn your mouth off.
