Having Just read jillmurphy's touching request for a favourite thing opinion, one thing sprang to mind. Never mind that I've been lucky enough to be free of cancer (as well as any other serious disease) for all my 31 years and that I've been blessed in other ways too, my first thought of favourite things was 'Tacos'. Irene made them for tea tonight as I lopped her tree this afternoon, missing the golf, but they were rare as we say 'round these parts.

I'm sure this answer to a word association test 'Favourite = Tacos' would either give the conclusion that I was a fat git or that I had a low sense of values, but no! tacos are great and should be celebrated! In truth I love all Tex-Mex food including fahitas, Chimmychungas burritos and all the other derivatives and knock offs.

For the unknowing Mexican food is usually spicy and varied. There is usually a self-assembly element which adds to the fun and you never get the same bite twice. If you are a novice the 'Old El Paso' range is a good place to start. They have that annoying 'Fun come in yellow boxes' ad campaign but they do come up with the goods where it matters.

Their taco dinner kit comes with 12 tacos which are big yellow shell shaped crisps. They are basically made of the stuff nachos are but less dense. I think traditionally they are fried tortillas but it's the nosh not the history that I've made my life's work. In addition you also get Taco seasoning mix and Salsa. Salsa is the spicy red stuff made out of tomatoes and chilli peppers. The kit salsa is a bit sissy and I'd suggest you substitute it with Doritos Picante salsa - hot stuff!

The idea is that you fry some lean mince (or chicken if you are a vegetarian!) along with the seasoning mix. This gives your mince a spicy but not overpowering taste. Once your mince is ready you zap the shells in the microwave for about 30 seconds and your ready to go. The
simple plan then is to stuff your warm taco with the spicy mince add the salsa and stuff your face.

The fun doesn't have to end here though because you can also add cheese, salad, cream dips or anything else lurking to the back of your fridge to your already heaving shell. With a variety of extra ingredients you can ensure no two tacos are the same and therefore have a varied and tasty dinner.

Not really one for our dieting chums as each taco alone is 109 calories and I can easily chomp six at a sitting. Add to this the mince and additions and you'll be on that treadmill all day

Home made tacos never fail to hit the spot but eating Tex-Mex in restaurants is always a bit dodgy. I had great Tacos in Liverpool which came ready assembled and had to be eaten with a knife and fork but had really ropey ones in Grand Canaria which soaked two napkins in run off grease before I got started.

So there you have it a cheap and easy meal that never fails to impress. Easy to prepared, infinitely variable and always tasty - I'm sure even chocolate sauce is allowable Jill!

Fajitas, chimichangas and burritos are all favourites of mine - but for some reason, I've never managed to try tacos. Yet :)

For the future, don't know if you like refried beans, if you do stay well clear of the El Paso ones (they look, smell and taste like cat food) On the other hand the Discovery range are great!
