*Miso paste, an interesting and delicious kitchen staple* When I was growing up, my mother always had an airtight acrylic jar lurking at the back of the fridge full of dark brown miso. This rich soybean paste was used with rice, as the base for hearty stocks and in place of yeast extract in our {then} vegetarian kitchen. Braver members of the family would also spread it on toast and miso and banana sandwiches weren't unheard of! I have to say that I don't have particularly fond memories of it (I don't think the miso she bought was very good), but culinary curiosity and a love of Japanese cooking led to me rediscovering this versatile ingredient last ...
