Aaah...cocktails. You really can't get better than a cocktail can you. Cocktails can be enjoyed at any time of year but I think theres something beautiful about cocktails in the summer. So now it is getting warmer I have been making them a lot more. I love a lot of cocktails, particular favourites include Sex on the Beach, Mojitos and Pina Coladas. But I've recently discovered one that has stormed into the lead as my favourite so I thought I'd share it with you. It's called the Cool Blue Hawaiian.

The Cool Blue Hawaiian is a fantastic summer cocktail. It's light, refreshing and, the best of all, it's a beautiful bright turquoise blue colour so very asthetically pleasing. It's fruity and coconut-y and when you drink it you *almost* feel like you are in the Caribbean.

These are the ingredients you'll need to make it:
1 cup of pineapple juice, chilled
1/2 cup of blue curacao
1/2 cup of light rum
1/2 cup of cream of coconut
(serves 4)

To make: in a cocktail shaker or blender combine ice, pineapple juice, blue curacao, rum and cream of coconut and blend/shake until mixture has mixed together well. If you havent got a cocktail shaker or a blender you could pour the ingredients into an empty plastic bottle and then shake together well - this is what I did when taking the mixture to a friends house rather than take all the bottles sperately. If you want to make it extra cool then chuck 4 cups of ice cubes in with the ingredients above (but you'll need a blender).

This cocktail is just fantastic, it is so tasty and refreshing. It has just the right amount of alcohol in to not be overpowering but enough to have some effect on you. Unfortunately it's not the cheapest cocktail to make as blue curacao costs around £11 and there is no cheaper alternative. Nor is particularly kind to your waistline - one book that featured the recipe stated that it contains 366 calories per serving. But this drink is nice enough to make you not care.

Overall a fantastic cocktail that is perfect for a summer party. It's delicious, refreshing and it's a lovely shade of blue =)
